- 1 whole chicken, chopped into pieces
- 2 cups buttermilk
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper (adjust to your preferred spiciness)
- Salt and Knorr seasoning cubes (3)
- Vegetable oil for deep-frying
Fried Chicken Cooking Instructions:
- In a cookpot, add the chicken and the seasoning materials, which are onions, knorr cubes, chopped garlic and salt to taste.
- Boil the chicken for about 40 minutes until cooked and tender.
- In a frying pan, add the vegetable oil, heat up, and fry the chicken until golden brown.
- Fry the chicken pieces in the hot oil and fry them in batches to avoid overcrowding the pan.
- Fry each batch for about 6–8 minutes per side, or until the chicken is golden brown and cooked through.
- Put them on a drain pan and allow to cool.
Jollof Rice Ingredients:
- Long-grain parboiled rice, 2 cups
- Chopped onions
- Tomatoes blended to a smooth paste.
- Red bell peppers blended to a smooth paste
- Tomato paste of 2 tablespoon
- A cup of vegetable oil
- Chicken broth, 2 cups
- Bay leaves of 2-3 pieces
- A teaspoon Thyme
- A teaspoon of Curry powder
- A teaspoon of Cayenne pepper (adjust to your taste)
- Salt and knorr cubes to taste
- Fresh mixed vegetables of carrots, peas, and green beans
Jollof Rice Cooking Instructions:
- Rinse the rice under cold water until the water runs clear.
- In a large pot, heat the vegetable oil over medium heat on the stove. Add the chopped onions and salt until they become golden brown.
- Add the tomato paste to the pot and cook for about 30 minutes, stirring constantly, until water evaporates to form a solid paste
- Pour in the blended tomato and red bell pepper paste. Add the bay leaves, thyme, curry powder, paprika, and salt, and then stir.
- Let it cook for about 20 minutes, or until the oil begins to separate from the tomato mixture.
- Add the parboiled rice to the pot and stir continuously till all the rice is fully coated with the tomato mixture.
- Add the chicken broth and bring the mixture to a boil.
- Turn the heat down, cover the pot with a tight-fitting lid, and let the rice cook for about 25 minutes.
- Cook the rice until the rice is tender and the liquid is absorbed.
- While the rice is cooking, steam the mixed vegetables until they are slightly tender. Drain them and set them aside.
- When the rice is cooked, add the mixed vegetables and stir them together.
- Cover the pot again and let it sit for about 5 minutes. It is then ready to serve.
